Rubén Guzmán is the Head Chef and driving force of the culinary team at the Serafina Beach Hotel. He oversees By the Pool, PiñaCo, and aMare. aMare, the signature restaurant of Serafina Beach Hotel, puts an Italian twist on Mediterranean and seafood dining in San Juan.

Chef Guzmán is a Puerto Rico native and uses his extensive knowledge of European and Mediterranean cuisine to put a new twist on traditional Puerto Rican flavors. Every dish is masterfully created to showcase local ingredients and flavors fused with Serafina’s Italian roots, such as fresh carpaccios, tartars, and branzino. Guzmán found inspiration for the menu from his love of seafood, as well as being with friends and family; he anticipates the “Branzino Al Sale” will be one of the most popular dishes in the restaurant. The Salmon Carpaccio is Chef Guzmán’s favorite dish on the menu to prepare because of all the small details that add to the incredible flavor, as well as the presentation of the meal.

Before joining Serafina Beach Hotel, Chef Guzmán worked alongside local celebrity, Chef Jose Enrique, at The Beach Club at The St. Regis Bahia Beach Resort in Rio Grande. As a result of Guzmán’s many accomplishments and excellent leadership, he was awarded Manager of the Year in 2017 and 2015 and was an integral part of the culinary team that represented the resort at the James Beard House in 2017. He has been part of multiple culinary competitions throughout the years including The Taste of Caribbean, where he won a silver medal in 2009 for individual competition, as well as a gold medal in 2009 and a silver medal in 2006 in the team division.

aMare is now open for breakfast from 7 AM to 11 AM daily, and open for lunch from 12PM to 4PM, Friday through Sunday. Dinner is served from 6 PM until 11 PM Sunday through Thursday, and until midnight on Fridays and Saturdays. Beginning in May, aMare will also be open for brunch every Sunday.
